Sweet Potato Brownies

Sometimes it can be a challenge to get the recommended amount of vegetables in your diet. Here is a recipe that uses orange sweet potatoes in unexpected ways.


These gluten free, dairy free nutritious brownies will satisfy your sweet tooth.


All the ingredients are simply mixed in one bowl and then it is ready for the oven.  Enjoy!



Ingredients:

  • 1 1/2 cups cooked sweet potato (cook peeled cubed sweet potatoes for 30 minutes in a 350 degree oven until tender)

  • 1/2 cup almond butter

  • 1/4 cup almond flour

  • 1/4 cup cocoa powder

  • 1/2 cup maple syrup

  • 1 tbsp oil 

  • 1 tsp vanilla extract

  • 1/4 tsp baking soda

  • 1/4 tsp baking powder

  • Pinch of salt

  • 1/2 cup chocolate chips


Instructions

  1. Preheat oven to 350 F.

  2. Mash the cooked sweet potatoes with a potato masher or a fork.

  3. Mix all ingredients together in a bowl and stir in the chocolate chips.

  4. Pour the mixture into a 9X9 baking pan lined with parchment paper.

  5. Sprinkle the top with a few more chocolate chips.

  6. Bake in the oven for 25-30 minutes.

  7. Let cool for one hour.

  8. Store leftover brownies in the refrigerator.
